I hope we will see Kirby in the 3rd Pack and Sonic in the 4th Pack. The characters in pack 3 are Kirby, Birdo, and Antasma, The Characters in pack 4 are Sonic, Tails, and Bowser Jr.
Don't forget the Vehicles and Cups!
The Vechicle in pack 3 will be Koopa King, Cact X, Warp Star ATV, and the Birdo Bike, The Vehicle in pack 4 will be Egg Robot Bike, Super Sonic Shoe, Airship Flyer, and the Bowser Car and the Wheels Gliders are Parasol, and Rings, Gliders Kirby Balloon, and Emerald Glider
The Cups in Pack 3 will be the Shine Cup and the Kirby Cup and The Cups in Pack 4 will be the Emerald Cup and the Yarn Cup

Now that's I'm thinking about this, I don't think there will be any more DLC. We already got 2 packs, which is more than some games having nothing.

Also, you're forgetting that Nintendo has plenty of other studios and developers to work on their games, right? Why else do we get atleast 3-5 new Mario games every year?

We're not getting any more Mario Kart 8 DLC. The rumor about the game having more DLC that was said in early May was written prior to the Animal Crossing DLC. The second pack came earlier than planned.
OK, I know it may seems a bit unlikely at this point, but I've rounded up some of the possible playable characters/stages/ect. if Nintendo makes anymore DLC Packs. Again, it may seem unlikely, but with the financial report (I can't find the link anymore) hinting about more DLC Packs and Nintendo claiming "...we see a massive serge of gameplay hours whenever we release more content" (http://www.examiner.com/article/why-nintendo-won-t-annualize-franchises-like-mario-kart-and-super-smash-bros) after the release of the second pack, I don't think we should give up just yet. Anyways, here's what I've got so far:
-Possibly both the oldest and biggest hint; The "Women of Racing Organization" signs in N64 Royal Raceway. There are a total of two: One with Peach, Daisy, and Birdo, and another with Rosalina, Toadette, and Wendy O. Koopa. Birdo is currently the only one of these women that are currently not playable. Some state that Birdo was planned and eventually replaced by Pink Gold Peach during development, but if that was true, then Birdo probably would have had her face replaced by Pink Gold Peach. Also, isn't it a bit odd that Birdo would sign up for a racing organization that she doesn't even participate in?
-Bowser Jr. makes an appearance as a statue in GCN Baby Park. It's confirmed to be Bowser Jr. and not Baby Bowser, since the statue has Bowser Jr.'s bandana. However, this could just be a reference to him, similar to the Waluigi statue in Waluigi Pinball.
-Paratroopa also has a shop in GCN Baby Park. This could possibly just be another reference.
-What could be Funky Kong's surfboard appears in N64 Toad's Turnpike. However, I don't think it was ever confirmed if it belongs to him (such as having his logo on it or something).
-Since Nintendo seems to be putting the F-Zero courses that have also been in Smash in these DLC cups (Mute City and Big Blue), this leaves only Port Town Aero Dive, which could possibly be used in another DLC Pack.
-The multiple F-Zero tracks could also mean that Captain Falcon could appear as future DLC.
-In the Animal Crossing course, you can see hats for Mario and Fox through the window in the Pine Sisters shop (I think). This could mean Fox might be a future DLC character, possibly to even promote Star Fox Zero.
-Maybe an Excitebiker could also be playable, but that one's most likely a long shot.

Highly doubtful there will be more DLC for Mario Kart 8. I think Nintendo is pretty much finished with Mario Kart 8. Move on to Splatoon and Super Mario Maker, that's where Nintendo are supporting at this time.

Oh well. It seems like the DLC for each game continues for about a year after the original game release so far. I believe the New Super Mario Bros. 2 DLC lasted about a year, Mario Kart 8 just lasted about a year, I think Smash has a few months left in it, and Splatoon will probably continue until Q2 2016. And hopefully Super Mario Maker gets some DLC.

Besides the game is over a year old and there are more popular games like SMM and Splatoon that Nintendo needs to focus on.
