It only protects you from items.

Boo tries to steal from VIP but it didn't work cuz of the Gaddlight! The coaster starts chasing you and you for safety on the Beauty space to the far right. The coaster is now on the right side of the board!

Go right and land on the Spring Space.

You're now on the same space as Berry!

Hylian Shield protects Cook from one item, Gaddlight doesn't harm Cook in any way, it just protects you. So Hylian Shield doesn't even get used.
