[CaptainShyguy]

It would probably be the Dahaka from Prince of Persia Warrior Within or Ganon from Ocarina of Time.

[kingboo]

Ganondorf in the Wind Waker and Ocarina of Time.
Outside of nintendo games, Shinjiro in Red Steel 2 is fun.. yet easy.

[MeleeMaster64]

The FinalHazzard from SA2 was challenging due to the messed up controls..

One of my favorite fianl boss fights was on Twilight Princess. They had you do so much to defeat him. I love battling bosses that have many forms to them because it just makes the games more interesting.

[kinetic563]

The Finalhazard on Sonic Adventure 2(it was epic) and the ending chapter; Repatriation on Fire Emblem(9): Path of Radiance where Ashnard; the King of Daein is the final boss.
