It's been such a long time.. but I think my last star might have been to get 100 coins on either the Rainbow Ride course or the Tick Tock Clock one.

Definitely the 8 Red Coins in Bowser in the Sky world. It's the last one chronically.
My last star was the one the Toad had in the room with Hazy Maze Cave (wow...)
Never even tried to get all the 100 stars, but my last star is always the 8 red coins in the Final Bowser World
Mine is not yet known. I think it will come from later stages such as Rainbow Ride.
Mine was actually Wing Mario Over The Rainbow. That course was torture. You shouldn't have to start all the way back to the castle grounds when you died.
