You know him, and you love him - None other than Sephiroth from Final Fantasy VII.
He appears in Kingdom Hearts 1 and 2 as an optional boss, thus being the hardest one to beat in both games. He has plenty of health... :
In Kingdom Hearts 1 you can face him any time in Olympus Coliseum by picking "Platinum Match". It first appears as "??????" and it is usually unlocked when reached the half of the storyline. Or at least your levels are usually up at 45-60. Best to keep leveling up or equipping godly accessories to even stand more than two hits from this beast.
Due to KH1's somewhat rough ground play, Sephiroth seems to be a lot harder to beat than his KH2's counterpart... I could be wrong though. There's been debate about this very subject before on internet.
In Kingdom Hearts 2, Sephiroth can be faced after every other objective in Hollow Bastion / Radiant Garden have been completed, if my memory serves. He has one attack that utilises the game's Reaction Commands (which made the game too easy anyway =P ).
Simply wait for Sephiroth to attack, then Guard. Proceed with a Counterattack and beat the snob out of him until he teleports. Repeat. xD
